NASTAR™
PEA STARCH
NASTAR™ is a native starch extracted from yellow peas. Compared to other native starches, yellow pea starch has the highest amylose content.
Obtained from this environmentally friendly raw material, NASTAR™ pea starch derives all its functional benefits from its physical extraction process from yellow peas. It is a locally grown crop, without the need for irrigation, and with a limited use of pesticides. It is also clean label.

NASTAR™ AND NASTAR™ INSTANT: STRENGTH FROM PEA
COSUCRA offers two NASTAR™ references distinguishable by their different functionalities and physical characteristics:
- NASTAR™, the native starch with high gelling properties
- NASTAR™ Instant, the precooked starch pregelatinized pea starch
NASTAR ™: THE NATIVE STARCH
NASTAR™ contain 48% of amylose on end-product, which is a considerable asset for a low gelatinisation temperature (68°C) which gives it a strong gel with short texture. It’s a versatile ingredient thanks to its process stability: high heat treatment, high shear, high expansion properties and acid conditions. Thanks to all these features, NASTAR™ is used for:

NASTAR ™ INSTANT: THE PREGELATINIZED PEA STARCH
NASTAR™ Instant pea starch is achieved after heat treatment and drying of the native starch. It is pregelatinized by physical treatment. It able to provide strong gels at cold conditions. Also, the syneresis due to retrogradation is strongly reduced. For all these reasons, NASTAR™ Instant is used for:
- Cold process
- Pulpy texture in instant soups & sauces
- Texturizing properties in plant-based meat.
- Expansion properties in extruded products
- Cheeses
